Texas Two-Step Slaw

This is the YUMMIEST and most DELICIOUS side dish to have at a BBQ or picnic.

1 Bag of Ready Cole Slaw Mix
1 Jalapeno, diced
1/4 Bunch of Cilantro
1 (11oz.) can Mexican corn (Green Giant) drained
1 Red onion, chopped
Some cheese
A dash of Cumin
Some Buttermilk Ranch Dressing
A squeeze of Lime juice

Place Cole Slaw Mix into a bowl. Make sure bowl is big enough to house all ingredients and still able to stir everything together. Put the rest of the ingredients into bowl. Add more Cumin to taste if desired. Buttermilk Ranch is just to coat everything. Make sure not to add too much. You can add Mexican cheese if desired. Let the Slaw sit in the refrigerator for at least a couple of hours before serving. Can eat as a salad or eat it with tortilla chips! Enjoy!

Substitutions: 1 green pepper can be used instead of the jalapeno

Italian Beef Sandwiches

1 beef roast (I use chuck)
1 packet Good Seasonings Italian Dressing dry mix
1 16oz jar mild pepperoncini's

Pour pepperoncinis into crock-pot, peppers and juice. Pour in about a whole jars worth of water. Mix in dry Italian dressing mix. Add roast. Cook until done. About 9 hours on low and 4 to 5 on high. Serve with rolls. The juice can be made into gravy, but just a warning it is spicy.

Italian Chicken Sandwiches

Desired amount of frozen (slbl) chicken breast (for my small family I use 2 to 3 chicken breasts)
1 packet Good Seasoning's Italian Dressing dry mix
8 oz. cream cheese

Put frozen chicken into crock-pot, place cream cheese on top and sprinkle dry mix over chicken. The frozen breasts will generate enough water to steam cook it. Cook until done. Chicken will shred very easily. Shred and serve with rolls.

Grilled Bacon Chicken

4 skinless, boneless chicken breasts, cubed
4-5 strips of bacon

Any season to taste. Just be careful not to add too much salt, if any. The bacon has plenty of salt in it! Spray chicken with cooking spray and add seasonings. Wrap chicken with bacon strips.
Grill until chicken is done.

Good Zucchini

4 - 6 small zucchini, peeled and chopped
1 Tablespoon butter
1 small onion, chopped or a couple dashes of dried onion flakes
A handful small croutons
salt and pepper

Melt butter in skillet over medium heat. Add zucchini and onion. Cook a little bit and then add croutons. Cook until zucchini is tender. Salt and pepper to taste.

Mexican "Chicken"

5 - 6 Tilapia Fillets, thawed
1 small jar salsa
2 handfuls tortilla chips, crushed
1/2 small bag shredded cheese
Cooking spray

Preheat oven to 350 degrees. Spray 9" x 13" pan and place fillets in pan. Cover with salsa, chips and cheese in that order. Cover pan with foil and cook for 15 minutes. Remove foil and cook additional 5 minutes or until fillets flake with fork.
